My ultimate biases are Jaejoong on the male side and Amber on the female side.

When it comes to the whole top/bottom-seme/uke thing, I have a hard time placing anyone in either box forever, since I'm all for versatility. As a result, you'll probably find me writing someone as a top in one story/chapter, and a bottom in the next, etc
