Mulan for sure! A strong girl fighting to protect her family and honor.
Plus character development too, she’s not already the perfect girl and loved by all. Then she earns satisfying national glory.

All the fairy tales sound good and very romantic-y, but I was quite surprised when I saw "Humpty Dumpty" listed (and I'm guilty of immediately choosing it if you don't mind my honesty, haha). I don't even think there's romance involved in "Humpty Dumpty" (from the version I hear and grew up with), so for originality's sake, I think this will be a good choice since almost all the other fairy tales have been "done" at least once. But regardless of which you choose, I'm with it all the way! Good luck, and enjoy writing it! =)
