It depends on the situation whether the first girl one is true for me. You see, if someone is talking to me and I'm quiet, I'm listening to them. But if nobody is talking, I may have a million things running through my mind, or I could just be extremely focused on trying to figure something out.
The second one again depends on what's going on. My stare has different meanings. My friends can tell whether it means I'm confused, I don't believe them, I'm disappointed, I didn't hear them, etc.
They are the only two I'm going to comment on cause I don't have much time.

as a girl I can easily agree to the first one... way too many thoughts run through my head when I'm quiet :D

Well cuz when I stare at you I probably spaced out and you just so happen to be in my line of vision.

Three and four I don't associate with.

I'm a girl.. and I'm quiet because:
1) I'm so unbelievably pissed of at you
2) I'm planning a million ways to murder you
3) I'm really bored
4) I'm listening to you (this applies to the people I am close with)
5) I'm listening to you but not very attentively (applies to strangers as I have very short attention spam :p)
6) Did I mention I'm pissed off at you?
7) Still pissed off

And when I stare at someone:
1) I'm not actually staring AT THEM, instead my mind is running aimlessly and I happen to be unfortunate enough to stare at your face without noticing that I'm doing that
2) I keep eye contact when talking (if this applies)\
3) Probably wondering how to murder you

Calling everyday... well, I would check up on my guy IF I HAD ONE... but I would also check up on him IF I WAS GOOD WITH ELECTRICAL DEVICES COZ GOD HELP ME I'VE BEEN BORN IN THE WRONG CENTURY AND ALSO IF THE CURRENT PHONE I HAVE DECIDED TO GET A LIFE AND NOT FOLLOW MY FOOTSTEPS OF BEING A SLOW AND LAZY BUM XD

If I say I miss you, I really do miss you.. but I haven't said to any guy yet *cries* XD
If I say I love you, I really, really, really do love you... coz I'm not the kind to open up my feelings and be all lovey-dovey... but I haven't said that to any guy yet either *cries again* XD

It's cute but no, I don't think it's true. I also think it's a little too binary. But that's just me.
